They are centre cut, sometimes referred to as boat cut, and perfect for roasting or smoking. Human consumption grade. To gain that restaurant finish and caramelised crust, season generously and roast on a high 220C for 15 20 minutes. Great for eating as its own dish, or as a spread on some crunchy toast. Bacon bits on top for that added extra touch! Raw only, photos of finished
